Join us at Holbrook Hotel on October 14th for a night of culinary fusion, where innovation meets tradition, and your taste buds are in for a treat.

Canapes:
• Marron, Old bay, Iceberg, bao
• Wandoo grilled and glazed beef tongue
• Eggplant, strange flavour sauce

First Course:
• Venison tartare, lavosh cornichons

Second Course:
• Butterflied Tumut trout, stinging nettle cream, cured trout roe with citrus salad
• Scotch fillet steak, Bordelaise butter, burnt onion puree with thrice cooked chips, black garlic cream, mixed green beans and lemon butter.

Dessert:
• Dulce de leche, chocolate tart, jersey cream
• Lemon tart, jersey cream
